Danish Elbeskiver - (small wonderful Pancake Balls)

Prep: Obtain a monks pan - a cast iron pan with 6 to 8 half round indentations.


you will need:

4 eggs
2 cups flour
2 cups rich milk
1 teaspoon ground cardamon
1 tablespoon sugar
1 yeast cake
1/2 teaspoon salt
butter and shortening(for coating pan)

Disolve yeast in lukewarm water with sugar. mix flour cardamon & salt in large bowl. heat milk to lukewarm, then add flour mixture, add yeast, add eggs 1 at a time- let rise in warm kitchen for 2 hours

melt butter & shortening together. place monk pan on medium heat. brush a good coat of butter mixture into each indentation and pour in batter. They form into semi-spherical shells, browned underneath, whereupon you turn them upside down with a small fork and brown on the other side so they close into hollow balls. serve hot with sugar and jam to taste or dip in maple syrup. great reheated too.

if you feel the need, you can also fill them with fruit filling, or peanut butter prior to fliping them..
