Cedar Planked Salmon with Dijon Brown Sugar Glaze

Soak cedar plank in water over night. (I get mine at Lowes in the BBQ aisle)

Remove skin from the bottom of salmon fillets
Salt and pepper the top of the fillets
Brush with Dijon mustard
Sprinkle with brown sugar

Preheat cedar plank in grill.
Flip plank over and place fish on top.

Close cover and smoke until fish is just flakey.

No need to turn.
